For those of you less familiar with cowboy culinary lingo, that’s one of the many names given to bull testicles. Y’all have a lot of opinions on the subject — it was one of our most popular posts. The overwhelming answer? Once upon a time, Rocky Mountain ranchers needed more cheap nutrition, so they started eating previously discarded cuts of meat. Thus, the most familiar name for this cowboy meal was born.
